Ramadan is going fast and we're already at day 10 and 11. For these two days we ate rice with green beans and dill with a side dish of veggie pancakes.
Ingredients
Rice
(For 4 people)
2 cups Basmati rice
500 g peeled green beans
1/2 cup dried dill
3-4 tbsp cooking oil
Veggie Pancakes
6 small eggs
1 tbsp flour
1 cup chopped fresh parsley
2 tbsp dried dill
1 large/2 small onions
salt
paprika
black pepper
pinch of ground cinnamon
Let the rice soak for at least an hour before starting.
Grab a large pot and add the cooking oil. Let it heat up and throw in the beans and leave for 5 minutes. Sprinkle some salt and 1/2 cup of dill. Add some boiled water after 10 minutes, so it covers the beans.
When another 10 minutes have passed you add the rice. Lower the heat, cover it and cook for half an hour or more.
Put the ingredients for the pancakes in a blender and mix well. Let the dough sit in the fridge for half an hour. Make small circles and fry in a pan till both sides are dark green/brown.
